Consider concrete countertops - concrete is virtually indestructible, and it can be colored, shaped and decorated to fit any decor.  When properly sealed, it makes a stain-resistant, easy to clean surface.  Concrete countertops are custom-made, either off-site or in your kitchen.  You can have precast slabs delivered to your house, complete with holes for your sink and faucet.  If you want a seamless slab, you can have the countertop poured in place and troweled, tinted, and textured on the spot.  In either case, be sure that the slab has adequate support; you may need to beef up cabinet support to hold it.  Concrete countertops are labor intensive and require a great deal of skill - luckily we have years of experience with such projects.  A properly finished counter will have a shiny surface.  This is achieved through troweling the concrete several times.  You should not attempt to chop foor on a concrete countertop as it can damage knives and other kitchen instruments. 

The ultimate solid surface, of course, is granite or marble.  While Corian and other polymer-based surfaces do a fairly good job replicating the look of the real thing in some cases, stone still provides a unique texture and quality, albeit at a premium price.  Solid stone also is heavy and awkward to install.  For all those reasons, and because they can often achieve a similar look with a less-expensive laminate or solid-surface products, production builders rarely install granite or marble in apartments.
